Beginning in 2001, Jan was instrumental in making our cookbook, Cooking for Comfort, a reality. A chemotherapy patient at the Minnesota Oncology St. Paul Clinic, she encouraged staff and patients to submit recipes. She shared a recipe as well and it is featured on page 74 in the book. We share it below. Upon the cookbook’s publication, Jan spread the word through sales of the book wherever she went. Driven by her passion for our organization, Jan spent countless hours raising awareness about the book and Angel Foundation until her passing in 2008. Overall, sales of Cooking for Comfort have topped $75,000. All proceeds benefit Angel Foundation programs.

Jan's Rocky Road Bars
Ingredients:
1 12 oz. pkg. semi sweet chocolate morsels
1 14 oz. can sweetened condensed milk
2 tbsp. butter or margarine
2 c. dry roasted peanuts
1 10 oz. package miniature marshmallows
Directions:
In top of double boiler, over boiling water, melt morsels with sweetened condensed milk and butter. Remove from heat. In large bowl, combine nuts and marshmallows. Fold in chocolate mixture. Spread in waxed paper lined 13 x 9 inch pan. Chill two hours or until firm. Remove from pan. Peel off wax paper. Cut in bars. Cover and store at room temperature. Makes 40 servings
